Laab Gai (Thai Ground Chicken Salad)

Laab Gai is a magical dish that tickles your taste buds with its unique blend of spicy, sour, and savory flavors. It's like a wild dance party in your mouth, with minced chicken, fresh herbs, and zesty lime juice all jiving together in perfect harmony.

Ingredients

  • 170 g ground chicken
  • 1 teaspoon water
  • 14 g Thai cilantro or leaf cilantro (finely chopped)
  • Thai chili powder (as much as you like, you can also leave this out if you’re not a fan of spicy flavors)
  • 5 g mint leaf (finely chopped)
  • 18 g shallot (thinly slice)
  • 2 Thai bird’s eye chilis (finely chopped, optional)
  • 2  teaspoons fish sauce
  • 1/2 teaspoon granulated sugar
  • 1 teaspoon toasted rice powder
  • 2 teaspoons lime juice
  • lettuce, green long bean, cucumber (served with dish, optional)
  • sticky rice (served with dish, optional)

Preparation

  1. In a medium pot on medium high heat, add in ground chicken and water. Stir until chicken is fully cooked, then remove from heat.
  2. Add in fish sauce, granulated sugar, toasted rice powder, thai chili powder and lime juice. Stir until well-combined.
  3. Add in chopped thai cilantro, chopped mint leaf, thinly slice shallot, and chopped Thai bird’s eye chilis. Stir until well-combined.
  4. Serve with steamed sticky rice, pair with vegetables of your choice (I love serving this dish with lettuce leaves, sliced green long bean and cucumber).
