Imagine gooey chocolate chip cookie dough, a layer of crunchy Oreos, and fudgy brownie goodness on top. It's like a party in your mouth, where cookies and brownies become besties.

Ingredients
FOR COOKIE DOUGH
- 2 eggs
- 100g granulated sugar
- 180g light brown sugar
- 160g salted butter (melted)
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 285g bread flour or all-purpose flour
- 70g white chocolate chip
- 160g semi sweet chocolate chip
FOR BROWNIE BATTER
- 2 eggs
- 95g granulated sugar
- 205g light brown sugar
- 200g salted butter (melted)
- 2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 70g cocoa powder
- 125g bread flour or all-purpose flour
- 180g semi sweet chocolate chip
FOR ASSEMLY
25 Oreo for layering
8 Oreo for topping
Preparation
Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
FOR THE COOKIE DOUGH
- In a mixing large bowl, add the egg, granulated sugar, and brown sugar. Using a whisk, stir until well combined.
- Add melted salted butter and vanilla extract, and mix until well combined.
- Gradually add the bread flour (or all-purpose flour), baking soda, and salt, mixing until just combined.
- Gently fold in the chocolate chips to evenly distribute them in the cookie dough
LAYER THE COOKIE DOUGH
- Press the prepared cookie dough evenly into the bottom of the parchment-lined baking pan. Make sure the entire bottom is covered with an even layer of dough.
- Place a layer of Oreo cookies on top of the cookie dough layer. You can line them up in rows to cover the entire surface. This will create a delicious Oreo center in the brownies.
FOR BROWNIE BATTER
- In another large a mixing large bowl, add the egg, granulated sugar, salt and brown sugar. Using a whisk, stir until well combined.
- Add melted salted butter and vanilla extract, and mix until well combined.
- Sift the cocoa powder and bread flour (or all-purpose flour) into the wet mixture to avoid lumps.
- Gently fold and stir the dry ingredients into the wet mixture until you have a smooth brownie batter.
- fold in the chocolate chips to evenly distribute them in the brownies batter
- Pour the brownie batter over the layer of Oreo cookies, spreading it carefully to cover them completely. Sprinkle crushed golden Oreo pieces on top.
- Place the baking pan in the preheated oven and bake for approximately 35-40 minutes. Check for doneness by inserting a toothpick into the center; it should come out with a few moist crumbs. Avoid overbaking for fudgy brownies.
- Once the brownies are baked, remove the pan from the oven and allow them to cool completely in the pan. This will help set the layers and make cutting easier.
- Once cooled, use the parchment paper overhang to gently lift the brownies out of the pan. Place them on a cutting board.
- Carefully slice the brownies into squares or rectangles. Wipe the knife clean between cuts to ensure clean edges. Enjoy!
