Skillet Apple Crumble Pie

This dish combines the warm, comforting flavors of a classic apple pie with the irresistible crunch of a crumble topping. This dessert takes traditional apple pie to the next level by baking it in a cast-iron skillet, which gives it a rustic charm and enhances the overall taste.

Equipment

  • 6 1/2″ cast iron skillet
  • Medium pan or medium pot
  • Silicone spatula
  • Digital food scale
  • Large mixing bowl
  • Whisk
  • Rolling pin

Ingredients

 FOR APPLE PIE FILLING

  • 75 g granulated sugar 
  • 25 g dark brown sugar
  • 3 g cinnamon
  • 5 g cornstarch
  • 1 tablespoon water
  • 35 g salted butter
  • 1 g salt 
  • 542 g honey crisp apple (diced)
  • 8 g lemon juice 

FOR CRUST

  • 100 g butter cold (cubed)
  • 155 g all-purpose flour 
  • 20g granulated sugar 
  • 1 g salt 
  • 20 g ice water

FOR CRUMBLE TOPPING 

  • 100 g all-purpose flour 
  • 50 g brown sugar 
  • 2 g salt 
  • 48 g salted butter (cubed) 
  • Dash of cinnamon 

 

 

 

Preparation

FOR CRUST 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine all-purpose flour, sugar, and salt.
  3. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  4. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
  5. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  6. After 30 minutes, take the chilled dough out of the refrigerator and roll it out on a lightly floured surface to fit the size of your skillet. Carefully place the rolled-out dough into the skillet, tucking in or trimming the edges. Using a fork, poke the base of the pie crust. Then, bake at 375°F (190°C) for 25 minutes.
  7. After removing it from the oven, set the pie crust aside and proceed to prepare the apple filling.

FOR APPLE PIE FILLING 

  1. In a saucepan, combine the diced apples, brown sugar, granulated sugar, butter, lemon juice, cinnamon, and salt.
  2. Place the saucepan over medium heat and stir the mixture until the sugars dissolve and the butter melts.
  3. Reduce the heat to low and simmer the mixture for about 15 minutes or until the apples have softened. Stir occasionally to prevent sticking.
  4. In a separate bowl, combine cornstarch with water and pour it into the apple mixture. Stir until thickened, about 30 seconds.
  5. Remove the saucepan from the heat and let the sauce cool down.

FOR CRUMBLE TOPPING

  1. Mix together the all-purpose flour, granulated sugar, brown sugar, cinnamon, and salt.
  2. Add cubed butter and use your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

ASSEMBLY 

  1. Add the apple pie filling into your baked crust. Sprinkle the crumble topping evenly over the crust and apple filling, covering the entire surface.
  2. Place the skillet back in the oven and bake at 425°F (218°C) for 12 minutes. Then, reduce the heat to 360°F (182°C) and bake for another 10 minutes or until the crust is golden brown.
  3. Remove the skillet from the oven and let it cool for a few minutes before serving. You can serve the apple crumble pie warm or at room temperature. It pairs well with a scoop of vanilla ice cream.
